Tom has been at the helm of Monachyle’s kitchen since 1999, recently passing it over to Head Chef Marysia Paskowska. Renowned for his ambassadorial passion towards Scottish produce and guerrilla-style of cooking, Tom is highly regarded amongst his peers in the Scottish food scene.
